Plated Dinner Catering at the Library of Congress: A Texas House Legislators Event

Catering & Events recently had the privilege of hosting a full service plated dinner for 140 members of the Texas House of Representatives inside one of the most storied institutions in the country. It was exactly the kind of event that reminds us why the details matter.

What Full Service Plated Dinner Catering Actually Looks Like 

For exceptional full service plated catering, Every course is thoughtfully sequenced, portioned, and timed. Your guests are greeted with drinks and light bites, and then seated, attended to, and moved through the meal with intention. For a group like this one, that level of care wasn't just preferred — it was essential.


For the Texas legislators, the evening began by greeting guests with a passed hors d'oeuvres reception at 6pm, giving guests the chance to arrive, settle in, and connect before the formal dinner began. Passed bites set the tone: Compressed Watermelon and Feta with fresh mint; Baked Brie Puffs with seasonal jam; Beet-Cured Smoked Salmon with cucumber, goat cheese mousse and lemon zest; and Steak Frites with marinated flank steak, potato haystack, and basil aioli. Each one scratch-made, each one designed to be as easy to hold as it is to remember.


A Three-Course Plated Dinner, Thoughtfully Executed 

At 7pm, guests were seated for dinner. The first course, pre-plated and ready as guests arrived at their tables, was a Beet and Fig Brûlée with orange, honey, burrata, and arugula — a dish that reads like a season and eats like a welcome.


The main course offered a dual-protein option that were both elegant and genuinely satisfying: Herb-Crusted Beef Tenderloin and Maple Mustard Chicken, both served with delicate potatoes au gratin and perfectly prepared green bean bundles. Dessert was served family-style: a chocolate board loaded our scratch-made Founding Farmers favorites: assorted Chocolate Squares, Candy Bars, Mini Crème Brûlée Donuts, Chocolate-Covered Strawberries, and fresh berries. It's the kind of ending that brings a room together.


A Best-in-Class Beverage Program to Match 

The Founding Spirits Bar rounded out the evening with cocktails built exclusively around our very own Founding Spirits liquors from our DC-based distillery— vodka, gin, bourbon, rye, blanco agave spirit, and rum. Alongside three house beers and a wine selection of two whites, a rosé, and a sparkling, the beverage program was designed to feel elevated without being heavy-handed. Tableside water and wine service was provided throughout dinner, with a non-alcoholic beverage station available as well.
